Before I get into the recipe, you may have noticed that things are looking slightly different around here! That’s right, we launched a brand new version of the site earlier this week. Believe it or not, this redesign has been 10 months in the making, so finally seeing it in action is a thrill. We continue to polish things up and make some little tweaks in that ever-constant pursuit of the best user experience.

So, what’s new?

  • Well, there’s a lot behind-the-scenes that went into the guts of the site to make it load faster and be extremely scalable no matter what kind of browser or device you’re using…anything from a 320 pixel-wide viewport up to a 27-inch iMac screen.
  • The mobile version of the site is pretty rad, and since about 50% of Stupid Easy Paleo readers are on mobile devices, we wanted to make that user experience the best it could possibly be. If you haven’t seen the site on your phone yet, go check it out…it’s pretty slick!
  • We’ve started using some cool new social sharing buttons and completely dressed the site according to our new branding for a really cohesive feel.
  • One thing we’ve worked hard to fix are ads. As much as I’d love to not have them here because I think they clutter things, they’re sort of a necessary evil that helps defray the cost of hosting the site. (Some day, hopefully we won’t need them!) Until then, I’ve partnered with a new company to help me optimize their placement and make them function as correctly as possible. I’ve never, ever intended for ads to get in the way of you actually clicking on things (that’s devious), but we had issues with placement in the past. That should all be 100% rectified.
  • The newsletter sign-up option is way more polite and out of the way. It lives at the bottom of posts (like this one) and in the header of the site (when you click on the red button). I decided to start offering a free gift when people sign up for my Thursday newsletter, so I hope you’ll consider taking advantage of it. I send out exclusive advice, tips, coupons and other good stuff (like offering free spots in the beta version of my Harder to Kill Challenge) only to people who get my newsletter.

I’d be remiss if I didn’t acknowledge the “we” I keep referring to: This new site build wouldn’t have been possible without the tireless efforts of my husband, Z. We hired a company last summer to build a new site, and things did not go as expected. Money was lost and hopes were dashed, but Z picked the project up from the ashes and started again from scratch despite working full-time, part of that for a very successful tech company.

Though he is never one to seek the spotlight, he has been instrumental in building sites along the way for some other well-known folks in the real food and fitness community. You know, people like Robb Wolf and John Welbourn of CrossFit Football – and the previous Stupid Easy Paleo – just to name a few. If you ever get a chance to meet him, I know he’d be chuffed to hear your thoughts on the site.

I did some crowd-sourcing over on the Facebook page about what folks would like to see from a “Stupid Easy Paleo Cookbook,” and one of the answers was meatballs. Kind of fortuitous since I had this recipe sitting in draft.

About These Paleo Chicken Pineapple Meatballs

I used canned crushed pineapple that was packed in its own juice and had no added sugar. Thoroughly drain it and gently squeeze out as much moisture as you can; you don’t want the meatballs to be soggy. Ground chicken, not ground chicken breast, works best because it has a bit of fat which helps keep these from getting hard and dry.

If you’re not into red pepper flakes, you can leave them out, but I think it adds a nice counterbalance of heat to the slightly sweet pineapple. This recipe is easily doubled so you can make plenty for the week ahead, and they also freeze well. (Note: Freeze them AFTER cooking.) Bonus: These would make a great post-workout snack!

Ingredients

  • 1 lb ground chicken
  • 1/3 cup crushed pineapple drained
  • 1/4 cup red onion minced
  • 2 tsp onion powder
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes

Instructions

  1. Preheat your oven to 350F. Line a baking sheet with parchment paper.

  2. Combine all the ingredients in a medium bowl, and mix with clean hands to combine. Don’t overwork the meat because it’ll end up making for tougher meatballs.
  3. Using a small scoop (I like to use a 2 tablespoon disher so they all end up roughly the same size) or a spoon, carve out a 2 tablespoon portion of the mixture. Gently roll into a ball and place on the baking sheet. Repeat this with the rest of the meat.
  4. Bake for about 15 minutes or until the meat is cooked through.
