Simple Greek Salad is my last ditch effort to hold onto everything yummy that summer brings. We ain’t in fall quite yet, and I refuse to break out the pumpkin spice already!

Full disclaimer: I’m not Greek, and I don’t claim that this is an authentic or traditional recipe. But when I think of what I love in a Greek salad, this is it.

How Do You Make a Simple Greek Salad?

Juicy tomatoes, crunchy cucumber, sharp red onion, Kalamata olives, and tangy feta all show up, of course. And then I added a couple of my own twists.

First, I love the freshness of flat-leaf parsley, so I tossed in a bunch of that. Parsley is often considered as a measly garnish and overlooked as a regular addition to salads, but I adore it. Parsley is a good source of Vitamins A, C and K. In herbalism, its well known as a carminative that helps alleviate gas.

Second, I added a couple handfuls of broccoli sprouts. These little powerhouses are rich in sulforaphane, a potent antioxidant compound. It’s super easy to grow your own broccoli sprouts, and I show you how in this tutorial. If you don’t have any broccoli sprouts for this Simple Greek Salad, don’t stress; you can just leave them off.

And if you can’t do dairy, no worries. Cubes of ripe avocado are a good substitute that’ll lend that nice creamy mouthfeel.

Let’s Talk Salad Dressing For This Greek Salad

Salad dressing annoys me sometimes. The cheap store-bought ones are rammed with low-quality oils like canola. But many people don’t have time to make their own. And you can now find high-quality prepared salad dressings but good gravy, they are expensive. (A good option if you’re time-pressed. I like this brand.)

So in this Greek salad, I just kept it simple: a squeeze of fresh lemon juice, drizzle of good extra virgin olive oil, and some salt and pepper. Give it a toss, and you’re done.

Greek dressings usually include some kind of oregano – dry or fresh – but it’s not one of my favorites so I left it out. You could totally add some oregano to your salad if you’d like.

Ingredients

  • 1 cucumber large, diced
  • 3 Roma tomatoes diced
  • 1/4 red onion thinly sliced
  • 1 bunch parsley chopped
  • 2 oz broccoli sprouts
  • 1/4 cup Kalamata olives pitted, chopped
  • 1/4 cup feta cheese full-fat, crumbled, optional*
  • 1 lemon juice only
  • 2 tbsp olive oil
  • sea salt and black pepper

Instructions

  1. Combine the cucumber, tomato, onion, parsley, broccoli sprouts, olives, feta, lemon juice, olive oil, salt, and pepper in a large bowl. Stir well to combine.
