Avocado BLT Egg Salad is a delicious and simple breakfast or lunch recipe.

I love egg salad. Also on the list of things that I love are: avocados, tomatoes, bacon, and scallions, to name a few. This is the absolute perfect lunch.
For one, it combines all of those favorite things listed.
And two, it is packed with protein and healthy fats to fill you up throughout the day, while being super simple to throw together!
This recipe replaces the standard mayonnaise that is ordinarily in egg salad with avocado. It is perfectly creamy and full of flavor!

Avocado BLT Egg Salad Recipe (Paleo, Whole30)
Ingredients
- 1 avocado
- 6 hard-boiled eggs
- 3/4 cup grape tomatoes cut in halves
- 4 strips bacon cooked until crispy
- 1/2 cup green onions chopped
- 2 tsp garlic powder
- 1/2 tsp sea salt to taste
Instructions

Make your hard-boiled eggs. Once done, peel, set aside in the refrigerator and let cool.

While they are cooking, make bacon using you desired method and cook until crispy.

In a medium bowl combine eggs, avocado, garlic and salt; smash with a fork until combined.

Add in bacon pieces, tomatoes and scallions. Mix well.

Taste and add additional salt and ground garlic as desired. Serve over fresh spinach or lettuce or in lettuce wraps!

6 eggs would be probably 2 or 3 servings but it honestly depends on how hungry you are 🙂

I’ve never made egg salad before and didn’t realize it was so easy! This looks delicious and I love how there’s avocado in it!
I LOVE all of these ingredients, however I gotta say, I’m a little skeptical about them mixed together.

I’d say a day or two at most. The tomatoes and bacon would get quite soft any longer than that.

I would say 2-3.
I’ve done this 3 or 4 times now. I tried the original recipe (substituted turkey bacon) and it was good. The next time I changed it up and did Cilantro and red onions for the scallions and bacon. Kind of a guacamole egg salad. May try some other ingredients in future tries.

FYI, Whole30’s Sonoma chicken salad uses avocado instead of mayo, along with red grapes and toasted pecans – we make that all the time.
Great with tuna salad as a sub for mayo as well!
How long could I refrigerate this for?
Hi Kristen…I’ve kept mine for a day or so after making it. The avocado does get a bit brown (doesn’t affect the taste at all).
By ground garlic do you mean garlic powder or crushed garlic or something else?

I made this this evening. Added some horseradish, a little lemon juice and chopped hot peppers. It was delicious! Even without adding my extra touches, is great. My husband loved it too. Will definitely become a go to easy meal. Thank you so much for putting this recipe out there for everyone to enjoy.

i am following whole30 … and find it difficult to find acceptable bacon, since most stores (even in case at whole foods) cure it with sugar. any one have suggestions??
It’s pretty hard to find. The brands that are out there with no sugar taste pretty terrible. (Exception: Pete’s Paleo bacon, available on their site.) I suggest using something like pancetta or prosciutto during Whole30 instead which typically has no sugar.
Costco’s low sodium bacon is cured without sugar. It’s in the red package.
I think I am going to try this without the bacon and perhaps swap it out for crisped Canadian bacon.

This was so fabulous. I halved the recipe as I was afraid of no self control and Id eat all of it. I’m def making it again. Yum. I left out the tomatos as I’m not a huge fan. I also used reg white onions. 2 bites in I remembered the bacon I had cooked and forgotten.

can anyone tell me how many calories this is per serving?
Hi Erika…I don’t count calories for my recipe. All you have to do to figure it out is to enter the ingredients into something like MyFitnessPal to get the total then divide by the number of servings you want to split it into.

Oh my gosh!! So good! I whipped it up this morning, only had bacon bits and no tomatoes but it was still yummy. Its for my lunch….but it was partly my breakfast too LOL!
