Beef liver has a long history as a traditionally valued food. Just like your grandma knew that chicken soup is good for what ails you, she also knew that liver has superpowers.

Over time, especially in Western culture, organ meats like beef liver have fallen out of use in favor of muscle meats.  Natural food markets may only carry beef liver – or other organs – occasionally. By comparison, the selection of chicken, turkey, beef, pork, and lamb muscle cuts is often much bigger. Sometimes, it’s more common to find beef liver at an ethnic food market than a mainstream supermarket.

Chicken breast is often considered “healthier” because it’s lower in fat, for example, but nutrient-wise it can’t compare with liver. Do you have to swear off muscle meat in favor of organs? Of course not. Rather, see where you can find an opportunity to include beef liver in your weekly routine.

Vitamin A, specifically, is one of the key beef liver nutrition benefits. It’s key for immune, eye, skin, and reproductive health. Liver is also a rich source of Vitamin B12, known for its role in red blood cell production and likely links to skin, bone, and brain health, among others.

Is it Safe to Eat Beef Liver Every Day?

The Vitamin A present in beef liver is fat-soluble and cannot be made by the body. That means you have to get it from the foods you eat. Because it’s fat soluble, Vitamin A can also accumulate in your liver. However, too much active Vitamin A – the kind found in beef liver – in the body can lead to a condition called hypervitaminosis A.

There are different recommended daily allowances of Vitamin A broken down by age range. Considerations are also made for pregnancy or breastfeeding status.

Even though beef liver nutrition benefits are many, it’s generally recommended to not eat liver daily. One serving – about 4 ounces – once a week is often considered sufficient. When in doubt, check with your nutritionist or health care provider for more information based on your specific needs.

Selecting Beef Liver to Eat

It’s important to choose beef liver – or any livers for that matter – that comes from high-quality animals. Ideally, those animals would be pastured or grass-fed and raised without antibiotics. If you can, get to know your local farmer or rancher and ask questions.

Eating Beef Liver if You Don’t Like the Taste

Now you know all the beef liver nutrition benefits. But, what if you don’t like the taste? I personally struggle with this one. Mainly, I didn’t grow up eating liver, and I’m a super-taster. I’ve tried every recipe for “liver haters,” and I still can’t deal. If you’re like me, here are a few options:

  • First, choose a milder-tasting liver, like chicken. Meatified and Mel Joulwan have some super popular liver recipes.

    You said only eat liver once a week , how would you take the vital protein liver capsules then once a week? How many do you take to add up to a weekly liver serving?

  4. I just dehydrated some thinly sliced liver in my dehydrator. OMG it is so yummy. it tastes like pate jerky. I came to find out how often I could eat them as a snack. I’m kinda sad it is suggested only weekly as I could eat this everyday. But What I should do is to weight the liver before I dry it, then weigh it after to figure out how much dry liver is equal to 4oz fresh liver. or just measure out 4oz fresh serving , slice and keep them separate in the dehydrator…

    I could only find calf/beef liver pre-sliced and frozen. So I took those slices and sliced them crosswise into slivers, and laid them onto parchment paper. I lightly sprinkled some powdered mushroom salt. I let this sit in my dehydrator at 158 degrees for a total of 10 hours, turning them over frequently. I ended up with crunchy, completely dried slivers of liver that taste like pate when I chew em.

    I’ve heard some people suggest blending a slurry and spreading it out like fruit leather but that sounds like more equipment to clean than just a cutting board and knife, but I’m sure that would work well if you are making a lot of it at once.

    1. I really appreciate your article about the benefits of liver. I grew up with a Glasgow-born Mom who served lots of peas, fish, and liver. The benefits of fish are well publicized in the U.S. but the outstanding nutrition in liver isn’t. Folate is important, especially combined with B6 and B12. Those 3 nutrients together have kept many seniors out of nursing homes. Liver is one of the most nutrient-packed foods available – and very affordable. Your suggestions for cooking it and “disguising” it are wonderful.

  5. Are there concerns of getting too much vitamin A and copper by taking beef liver supplements everyday? Would you recommend perhaps not taking everyday to avoid getting to much of these vitamins and minerals?

  6. You can also make beef liver taste milder by soaking it in milk beforehand. The longer you soak, the less like liver it tastes. I would try soaking it 1-2 hours and see if that makes it tolerable.
