I’ve used a fresh assortment of raw nuts and coconut as the base, then totally went two different ways: sweet and savory.

The sweet variety smells exactly like fall. It’s got warm pumpkin pie spice, plump golden raisins, a touch of maple syrup and my secret ingredient, Vital Proteins Vanilla Collagen Peptides for a boost of protein.

Why I Add Collagen Protein to My Grain-Free Granola

It’s got the same nut and coconut base, and then I add pepitas, aromatic rosemary, and dried minced onion. Then I toss in the other secret ingredient, Vital Proteins Organic, Free-Range Chicken Bone Broth Collagen.

My Favorite Collagen

So why Vital Proteins Collagen?

There are a ton of reasons why I love including Vital Proteins Collagen in my routine:

How to Make Grain-Free Pumpkin Granola

This Grain-Free Pumpkin Granola is very simple to make.

You’ll combine the nuts and coconut with the spices and Vital Proteins Collagen.

Then, you’ll add the binder. I use egg white to help the granola stick together and form clusters.

If you can’t eat eggs, you may want to experiment with other binders. Try adding a bit more pumpkin puree, for example.

From there, you’ll gently bake these granolas in a low oven until the nuts and coconut are perfectly toasted.

Make one or both! They’re both snackable as is, or try these suggestions:

Use the sweet as a topping on fresh fruit or on top of Vanilla Berry Chia Pudding.

The savory is great sprinkled on top of a salad or soup!

When I tested both these grain-free pumpkin granola varieties, they stayed fresh for well over a week. I stored them tightly covered in a Mason jar, and they maintained their crisp-chewy texture.

Sweet Grain-Free Pumpkin Granola Recipe

Ingredients

  • 1/2 cup unsweetened coconut chips wide strands
  • 1/2 cup raw unsalted pecans
  • 1/2 cup raw unsalted walnuts
  • 1/4 cup golden raisins
  • 2 tbsp Vital Proteins Vanilla Collagen Peptides
  • 1 tbsp hemp hearts
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract*
  • Pinch sea salt
  • 1 tbsp maple syrup or raw honey*
  • 1 egg white

Instructions

  1. Preheat your oven to 300F, and line a rimmed baking sheet with parchment paper. 
  2. In a large bowl, combine the coconut chips, pecans, walnuts, raisins, Vital Proteins Vanilla Collagen Peptides, hemp hearts, pumpkin pie spice, and salt. Toss with your hands or a spoon until well mixed.
  3. In a small bowl, lightly whisk together the maple syrup and egg white. Pour into the large bowl with the nut granola mixture and toss well until everything is coated with the liquid. 
  4. Dump the mixture out onto the baking sheet and spread it gently. It's okay if some areas are clumpy...those make for good clusters.
  5. Bake for about 6 minutes, then gently stir and rotate the tray. Bake for another 4-8 minutes depending on your oven. It's best to stay close to the kitchen for those last minutes because it can go from golden and crunchy to burned in a flash.
  6. Remove when everything is golden brown. Let cool completely, then store in a covered contained for up to five days.

Recipe Notes

Store in a covered container for up to a week.

*Omit for Whole30...but then again, you should already know that 😉

  1. Steph, can you clarify something? The recipe says this is Whole30, but (please let me be wrong, I really want this so bad right now), I thought all sweeteners are not approved during a W30…this would include maple syrup. I’m saving these for my reintroduction phase next week and then my transition to paleo just in case.

    1. Yep exactly so you’d just leave out the maple syrup. I updated the ingredients to reflect that. I always just assume that people know to omit sweeteners if they’re on a whole30 but maybe I shouldn’t assume 😉

  2. Is it possible to leave out the peptides? I’m needing to do things on the cheap (I’m on Soc. Sec.) and I just saw what they cost. (yikes!) Or can I substitute something else? Thanks

  3. So on the sweet one it’s no pumpkin purée, just pumpkin pie spice? I want to make sure I get these right because they sound oh so delicious!!!

    1. Correct. I used maple syrup as the liquid part of the recipe in the sweet version which is why I didn’t include puree in that one.

  4. This looks wonderful. Thank you. Since the Vital Proteins vanilla collagen peptides come from bovine hide, can the recipe really be classified as vegetarian?

    1. I dunno Christine, I guess it depends on what vegetarian means to you. Most people I know who are vegetarian eat no meat, seafood, or eggs. Since it comes from bovine hide, I wouldn’t classify that as meat. I definitely wouldn’t call this vegan…but in my mind, it’s really up to the individual to decide what their version of veg is…just like paleo.

    1. No. Give it a try if you want…just be aware that adding too much wet stuff may extend the cooking time significantly OR just not even crisp up.

    SO of course, I bought the GIANT Vital Proteins Vanilla Collagen Peptides container when I saw this recipe (it’s how I roll) and am wondering what else I can do with it??? This enters that “supplement” area where I feel kind of like a dummy :).
