Thai Salad with Cilantro Lime Dressing has flavors that I just can’t enough of!
When I came back from Scotland, all I was craving was super fresh veggies and this salad fits the bill. It’s inspired by one I had at Tender Greens but now that I made my own version I can have it any time without driving to the restaurant—plus, it’s nicer on my wallet and Whole30-friendly.
The key to making this super-special is to use the freshest veggies you can find; it makes a huge difference. All quantities are approximate, and if you don’t like an ingredient, certainly leave it out or substitute it for something else. Top it with your protein of choice—grilled steak, pan-fried lemon chicken or shrimp would all be outstanding—for a complete meal.
Thai Salad with Cilantro Lime Dressing Recipe
This Thai Salad with Cilantro Lime Dressing recipe is totally fresh and a way to get in more veggies! Paleo and Whole30 friendly!
Ingredients
For the Salad:
- 1 head green leaf lettuce roughly chopped
- 1/2 cup green papaya julienned
- 3 tangerines peeled and segmented
- 1/4 cup fresh mint leaves
- 1/4 cup fresh thai basil leaves
- 1/4 cup cashews
For the Dressing:
- 3 tbsp sesame oil
- 1 tbsp lime juice
- 1 tsp coconut aminos
- 1/4 tsp fish sauce
- 1 handful cilantro
- 1/2 tsp honey optional but omit for Whole30
Instructions
For the Salad:
- Combine all the ingredients in a large bowl and toss well. I kept the mint and basil leaves whole, but you could always chop them.
For the Dressing:
- Combine all the ingredients in a food processor and blitz until the cilantro leaves are finely chopped and everything is combined.
- Use right away or store for 1 to 2 days, tightly covered in the fridge. Give it a shake before using.

I tried to make this dressing. Is it missing something (more oil)? The entire dressing was only ~5 tablespoon worth. I threw it out and tried your creamy cilantro dressing. It was fantastic! My kids were jamming fistful of arugula tossed with the dressing into their mouths (3 and 5 year olds).

Hi there…nope, it’s not missing anything but you could certainly add more oil. I generally don’t make a ton of dressing per recipe…only enough to be used on the greens. That’s a hair over 1/4 cup. Glad you found something you liked!
