Cilantro Lime Cauliflower Rice is the perfect low-carb base to add to so many dishes. It's got tons of flavor and is paleo, gluten-free, and grain-free.

  • 1 tbsp avocado oil
  • 2 lb cauliflower cored and riced in a food processor or blender
  • 1 tsp garlic powder finely chopped, or 1 clove garlic
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • Zest & juice of 1 lime
  • 1/2 cup cilantro chopped


  1. In a large skillet over medium-high heat, add the avocado oil. Then add the riced cauliflower, garlic, salt and pepper. Cook and stir for 5 to 7 minutes or until the cauliflower is tender. Turn off the heat and stir in the lime zest, lime juice, and chopped cilantro.

Recipe Notes

If subbing pre-riced cauliflower, you might want to use two 16 oz bags.

If you don't like cilantro, sub with flat leaf parsley.
