Add the water to a blender pitcher. Toss in the turmeric root and ginger root. You can chop them but I usually leave them whole and unpeeled. Blend 30 seconds on high until the roots are broken down.
Strain this mixture through a mesh strainer into a medium pot. Add the honey, and heat on medium-low for about 10 minutes until the honey is dissolved. This will take the edge off the raw flavor of the turmeric and ginger. Turn off the heat.
Add the lime juice and pinch of black pepper, if desired. Refrigerate until chilled or serve hot like tea. Keeps for up to a week in the refrigerator.
