Preheat your oven to 300F, and line a rimmed baking sheet with parchment paper.
In a large bowl, combine the coconut chips, pecans, walnuts, pepitas, Vital Proteins Organic, Free-Range Chicken Bone Broth Collagen, sesame seeds, hemp hearts, rosemary, dried onion, salt, and pepper. Toss with your hands or a spoon until well mixed.
In a small bowl, lightly whisk together the pumpkin puree and egg white. Pour into the large bowl with the nut granola mixture and toss well until everything is coated with the liquid.
Dump the mixture out onto the baking sheet and spread it gently. It's okay if some areas are clumpy...those make for good clusters.
Bake for about 6 minutes, then gently stir and rotate the tray. Bake for another 4-8 minutes depending on your oven. It's best to stay close to the kitchen for those last minutes because it can go from golden and crunchy to burned in a flash.
Remove when everything is golden brown. Let cool completely, then store in a covered contained for up to five days.
