Get the sparkling water into the fridge to chill.
In a small saucepan, combine the pomegranate juice, 4 slices orange slices, 2 cinnamon sticks, the cloves, and allspice berries. Bring to a boil, then reduce to a low simmer for about 30 minutes. Turn off the heat and use a slotted spoon to remove the orange slices and spices.
Chill the juice in the refrigerator until ready to use. Be sure it’s cold or else it’ll knock the bubbles out of the sparkling water.
To serve, pour ¼ cup (2 oz) of the mulled pomegranate juice into a glass. (I use stemless wine glasses but use what you have on hand. You can even chill the glasses for an extra-refreshing spritzer.) Then top with 1 cup (8 oz) sparkling water immediately before serving. Garnish with a cinnamon stick, slice of orange, and pomegranate arils.
